Butterscotch-glazed sweet poatatoes

- 3 large
- sweet potatoes, cut into 1"-chunks
- 1/4 c
- olive or canola oil
- 1/2 tsp
- 1/3 c
- butterscotch dessert topping, i used fat free.
1Heat oven to 350. Place potatoes in a 8"-square baking dish. Drizzle w/ oil. Season w/ salt.
2Bake, uncovered for 30 mins, or until tender. Remove from oven and toss w/ butterscotch topping.
3I also sometimes top the potatoes w/ toasted pecans.
