I saw a diner cook on TV do something similar to this and thought it sounded great -- a mash of yummy breakfast stuff. Made this last week, and it is absolutely delish! I used leftover spicy smoked sausage from one night's dinner. If you use a mild sausage, you may want to add a splash of hot sauce if you like a kick. Even for the tomato haters (like my daughter), the tomato really adds a lot to this, so I would go ahead and use it. I don't think they'll know it's in there. Use more cheese if you're a cheese nut like me. I sprinkled some more on top after everything was mixed up.

This may look like a big mixed up mess but it is delicious! All the fresh veggies give this dish a great flavor and then the melted ooey, gooey cheese in the mix of all this yumminess is just fabulous. This is fairly easy to throw together and all though it is great for breakfast this is hearty enough to have any time of day. If you like to do breakfast for dinner, this is the dish to make.

Ingredients

  • 6 large eggs
  • splash of milk
  • 1 pinch nutmeg
  • 3 medium potatoes (I used 2 red & one white), cut in bite-sized chunks
  • 1/2 medium white onion, diced
  • 1/2 medium red pepper and yellow pepper (sweet kind), diced
  • 1-2 cooked links of sausage (I used leftover spicy smoked sausage) cut in bite sized pieces
  • 1/2 pound shredded sharp cheddar cheese
  • 1/2 medium tomato, diced
  • paprika, to taste, optional
  • garlic powder, to taste, optional
  • salt, to taste, optional
  • pepper, to taste, optional
  • seasoned salt, to taste, optional
  • chopped parsley, optional
  • chopped scallions, optional

Michelle said to form a square to make a well for the eggs. My skillet was round, so I formed a circle with the same effect.
  • Step 1
    Beat the eggs with a splash of milk and a pinch of nutmeg. Set aside.
  • Step 2
    Meanwhile, get an electric skillet (or very large pan) heating with about 1 Tbsp butter and 1 Tbsp canola oil over medium heat.
  • Step 3
    Add the potatoes and sprinkle with some salt. Cook for a couple of minutes, tossing around lightly.
  • Step 4
    Then add the onions, peppers, and spices. I used paprika, garlic, seasoned salt, some parsley, and black pepper. Cook until the potatoes and veggies are tender (about 5-10 mins, depending on potato size).
  • Step 5
    Add the tomato and sausage pieces (remember mine were pre-cooked). Toss around to get it all cooked through.
  • Step 6
    Then, push the potato mixture into a square shape, making a well in the opening.
  • Step 7
    Melt about a tablespoon of butter into the open area. Pour the beaten eggs into the opening and let them cook for about 1 minute. Then begin stirring them with a rubber or wooden spatula/spoon. Add some salt and pepper to the eggs.
  • Step 8
    Once they start getting white and firming up just a bit, add the cheese. Once that starts to melt, stir everything together. It will look like a mash-up of yumminess.
  • Step 9
    I sprinkled some more black pepper and scallions on top. Dig in! Serve with toast or muffins and some fresh fruit.
