Nancy J. Patrykus

My son gave me a bag of fresh spinach, straight from his home garden. He knows my love of spinach!
A made a spinach salad for lunch.
Then having some spinach left over I devised this recipe to use the spinach while it was so nice and fresh.
I call it my "Grecian Delight" This is a quick and very simple dish to prepare.
I hope you will enjoy it as much as I did..
This recipe is for one person (me) but you can increase the ingredients for a family to enjoy.
