I found this off a contest site & found it interesting, but there was no way to "pinch it", so I copied it.

Ingredients For bacon artichoke potato salad

2 lbred potatoes, quartered

water
-
2 Tbspsea salt, divided

3/4 cmayonnaise
-
1 - 8 oz jarmarinated artichokes, chopped

1 tsppepper
-
1 tspdijon mustard
-
6 slicebacon, cooked crisp & chopped

2 Tbspbacon drippings
-
8 ozsour cream
-
1 - 4 oz cangreen chiles, chopped

1 mdred onion, chopped
How To Make bacon artichoke potato salad

1Place potatoes & 1 tbsp salt in large pan, cover with water, bring to a boil then lower to medium heat until cooked through, about 20 - 30 minutes.

2While potatoes are cooking, in a large bowl, mix all other ingredients, including remaining salt; mix well.

3Once potatoes are done, drain water & let sit for about a minute. While potatoes are still hot, cut into average size bites & then add them directly to the mixture. Coat potatoes, mixing well. Refrigerate, covered, 5 hours or overnight. Serve cold.
