I found this off a contest site & found it interesting, but there was no way to "pinch it", so I copied it.

Ingredients For bacon artichoke potato salad

  • 2 lb
    red potatoes, quartered
  • water
  • 2 Tbsp
    sea salt, divided
  • 3/4 c
    mayonnaise
  • 1 - 8 oz jar
    marinated artichokes, chopped
  • 1 tsp
    pepper
  • 1 tsp
    dijon mustard
  • 6 slice
    bacon, cooked crisp & chopped
  • 2 Tbsp
    bacon drippings
  • 8 oz
    sour cream
  • 1 - 4 oz can
    green chiles, chopped
  • 1 md
    red onion, chopped

How To Make bacon artichoke potato salad

    Place potatoes & 1 tbsp salt in large pan, cover with water, bring to a boil then lower to medium heat until cooked through, about 20 - 30 minutes.

    While potatoes are cooking, in a large bowl, mix all other ingredients, including remaining salt; mix well.

    Once potatoes are done, drain water & let sit for about a minute. While potatoes are still hot, cut into average size bites & then add them directly to the mixture. Coat potatoes, mixing well. Refrigerate, covered, 5 hours or overnight. Serve cold.
