Luby's Macaroni and Cheese

Our family loved eating at Luby's when we were growing up. I always got their mac & cheese along with the fried fish. Yum! :)

Ingredients

2 c
dry elbow macaroni
2 Tbsp
nonfat dry milk
2 Tbsp
all pourpose flour
1 Tbsp
butter or margarine, melted
1 1/4 c
boiling water
3 c
shredded yellow american cheese from the deli
1/4 tsp
salt

Step-By-Step

1Cook macaroni according to package directions. Drain.
2Heat oven to 350.
3In large bowl, mix dry milk, flour, and butter. Gradually add boiling water, wisking constantly.
Add 1 1/2 cups of cheese and continue to wisk until smooth & creamy.
4Stir in macaroni, 1 cup of the remaining cheese, and salt. Transfer to a lightly greased 2-Quart baking dish. Cover with foil. Bake for 25 minutes.
5Remove foil. Sprinkle with remaining 1/2 cup cheese. Continue baking 1 minute or until cheese melts.
