Creamy Spicy Mac and Cheese

I wanted a memorable mac and cheese to go with our smoked brisket. Mission accomplished! Bump this up a notch by adding some crumbled bacon or diced ham.

Ingredients

16 oz
package of pasta-your favorite
6 oz
velvetta cheese-light
8 oz
cream cheese-light
4 oz
cheddar cheese-grated
1/4 c
sour cream-light
10 oz
can rotel
1/2 tsp
ea. of granulated garlic, granulated onion, cumin, black pepper
1 tsp
dried parsley
crumbled bacon or diced ham, optional

Directions Step-By-Step

Place rotel in med. saucepan, add seasoning, cream cheese, and Velveeta. Heat over low heat to melt.

Meanwhile, cook pasta according to package directions.

Drain pasta, mix in sour cream, then pour rotel cheese mixture over pasta, add grated cheese and parsley, mix well.
