3/4 box spaghetti noodles
1 lb bacon, cut up
1 c cottage cheese
1 medium onion, chopped
salt & pepper

Kimi's Notes:

Just experimenting in the kitchen and came up with this delicious side dish. So flavorful with the pasta tossed in bacon drippings with caramelized onion and then tossed with cottage cheese. Nobody knew it was cottage cheese. I got rave reviews!!

 

Directions

Cook pasta according to pkg directions. meanwhile fry bacon pieces till crisp, save drippings; drain and set aside. Cut up onion and saute in bacon drippings, add pasta (with a couple tbsp of bacon drippings), bacon & cottage cheese. Salt & Pepper to taste. Toss well; add more bacon for garnish.

It was heavenly...the bacon drippings and cottage cheese made it so rich and flavorful, not to mention the crumbled bacon of course.

I have a friend who makes this exact dish - sounds crazy, but is absolutely amazing. She made it for a brunch we had - it was ALL gone. Even the kids went for 2nds and 3rds. YUMMY

Sometimes when we think we come up with our own someone else has the same idea...I love that about cooking and creating. There are cooks out there with familiar taste buds. Glad it was a hit!!

So glad you enjoyed the pasta. I found real fine noodles at Big Lots and I am def. going to use them. My mom used to make all her noodles homemade. I saw them and thought of my mom. Big Lots has such neat pasta from all over the world. I love checking out what they have!!
