FIRST: Combine egg and milk in shallow bowl,have flour ready in a shallow bowl or plate, bread crumbs in another shallow bowl or plate.
Combine cream cheese,garlic,parsley and salt, I mix with mixer ... then add basil and blend lightly.
Cut tomatos into 1/2 inch slices and try to match up same size slices, just close, don't have to be perfect ... try to get even number of slices ... spread half of the slices with cream cheese mixture, make sandwich with other slice of tomato.
Dredge each sandwich in flour,then dip in egg mixture,then in bread crumbs ... fry over Medium heat in mixture of Butter and Olive Oil until brown.
I use both kinds of bread crumbs, depends on what I am serving the tomatos with ... The Italian crumbs with the cheese really makes them extra SPECIAL anytime!These also make a wonderful appetizer ... cool enough to cut in quarters,(use serrated knife).
Garnish with some Fresh Parsley or basil ... Enjoy!
