Always looking for something for brunch, we call it that because my Hubby is a late riser get tired of the same old thing so when I seen the leftover potatoes I thought alright potato pancakes but Hubby don't really eat them well add cornmeal and he loved them.

Ingredients

1 1/2 c
seasoned mashed potatoes
1/2 c
flour
1 large
egg
2/3 c
corn meal( i used yellow)
2 1/2 Tbsp
butter, unsalted

Directions Step-By-Step

Melt butter in large fry pan or iron skillet.

Mix all ingredients together. Spoon out dough into pan with melted butter I flattened them just a little.

cook till brown and crispy on both sides. Serve with warm maple syrup.
