Ingredients

6 1/2 c
diced sweet red peppers
7 1/2 c
diced green peppers
6 c
diced onions
2 qt
boiling water
3 c
cider vinegar
2 1/2 c
sugar
1 Tbsp
canning salt
2 tsp
mustard seed
1 tsp
celery seed

Step-By-Step

1In a large container, combine peppers and onions.
Pour boiling water over and let stand for 20 minutes; drain well.

2In a large kettle, combine the remaining ingredients; bring to a boil.
Add pepper mixture; cover and simmer for 20 minutes.

3Pour hot into jars; leaving 1/4 inch headspace.
Adjust lids.
Process for 15 minutes in a boiling water bath.
