Try replacing the peanut butter in your favorite peanut butter cookie recipe with THIS nut butter. :D TIP: If using a blender, be sure to follow the manufacturer’s instructions for making nut butters. Stopping the machine every minute or so is a good idea, as it gives the motor a chance to cool a bit.

Ingredients For mocha hazelnut butter

  • 2 c
    toasted and rubbed hazelnuts
  • 1/2 tsp
    salt
  • 2 Tbsp
    cocoa powder
  • 2 Tbsp
    honey (or sugar sub equal to this amount)
  • 1 tsp
    instant espresso powder

How To Make mocha hazelnut butter

    Preheat oven to 325f. Roast nuts (and or seeds) for 10 to 15 mins. Stir twice during this time. Place nuts in a towel and rub like crazy to remove skins. If the skins aren't removed the end product will be bitter.

    Transfer to a food processor or high powered blender while still warm. Process until finely ground, about 3-4 mins.

    add 1/2 tsp salt and 1 to 2 Tbsp of neutral tasting oil such as canola or grape seed oil.

    Continue to blend until smooth and creamy adding a few more drops of oil only if needed. At this point also blend in the rest of the ingredients.

    Taste and adjust seasonings if needed. Enjoy.
