I make this delicious spread for hubby to take to work. He loves it for sandwiches or on crackers, for a quick snack. It's so easy to make. This is my version.

This recipe is for 3 pounds of bologna...you can easily halve the recipe.

Ingredients

3 lb
bologna ( i use eckridge all beef ) minced fine in food processor
4 Tbsp
dill pickle chopped, or relish
med
onion, chopped small
1 c
mayo or till your preferred consistency
2 Tbsp
ranch dressing
1 1/2 Tbsp
dijon mustard
1 - 2 tsp
sugar ( optional ) this helps balance out the saltiness of the bologna
pepper
to taste

Directions Step-By-Step

I process bologna in food processor till pretty fine.

Place in large bowl; adding all other ingredients. Stirring till well blended. I don't measure mayo, I go by the thickness we prefer.

Refrigerate overnight, it is so much better after the flavors have time to mingle. Serve on bread or even crackers.
