This is a dry version of of the popular North African spice mix and can be used with all meats, fish and even veggies.

Ingredients

4 tsp
cumin seed, toasted and lightly ground
4 tsp
coriander seed, toasted and lightly ground
8 Tbsp
dried chilli, chopped finely
4 tsp
smoked paprika
2 tsp
sea salt
1 tsp
caraway seeds, toasted and finely ground
1 1/2 tsp
garlic powder

Step-By-Step

1In a frying pan place the seeds and toast them till they become fragrant. Don’t let them burn.

2Place all the seeds in a mortar and pestle or apice grinder, work them to a coarse grind.

3Mix all the ingredients together and give it a few days to settle and combine for best taste.
