green tomato salsa
Who says green tomatoes are best fried? While I do like them that way, this is another take on the tart zing of a Southern-style salsa. It's mildly spicy and won't overwhelm your taste buds At the beginning of tomato season most supermarkets will have green tomatoes, if not try your local farmers market, if you don't grow your own tomatoes. This salsa pairs well with mushroom quesadilla.

Ingredients
- 2 cups diced green tomatoes (about 4 medium green tomatoes)
- 1/2 cup diced red bell pepper
- 1/2 cup diced roasted red bell pepper
- - juice of 1 lime
- 1 large jalapeno, seeded, cored and minced
- 2 tablespoons minced fresh cilantro
- 1/4 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper

Step 1Combine all the ingredients and refrigerate in an airtight container for 30 minutes.
