Ingredients

1 1/4 c
black beans
1 1/4 c
white corn
3/4 c
red onion, diced
3/4 c
green bell pepper, chopped
1/2 c
balsamic vinegar
1/3 c
olive oil, extra virgin
1 1/2 tsp
dijon mustard
1/4 c
parsley, flat leaf chopped

Step-By-Step

1Combine all ingredients except for parsley and mix well. Cover and refrigerate up to 3 days. Bring to room temperature and add parsley.
