hard boiled eggs, chopped
Melt butter in a heavy saucepan over low heat
Stir in flour increasing heat until mixture bubbles gently
Remove pan from heat, add milk and stir, return to heat stirring constantly
Stir until mixture comes to a boil
Reduce heat to medium, stirring constantly adding more milk if mixture becomes too thick
Season with salt and pepper, add eggs and mix.
