Shred or FINELY chop zucchini, peppers and onion. Put in large bowl mix together,and add 1/2 cup salt and mix again. Add water and ice and place in fridge overnight.
DAY 2: drain and rinse zucchini mixture and put in large pot. Add sugar, white vinegar, turmeric, mustard seed and celery seed. Simmer for 30 minutes stirring occasionally.
