Ingredients For ranch chicken tacos

  • 1/2 c
    ranch dressing or reduced-fat ranch dressing
  • 1/4 c
    sour cream or reduced-fat sour cream
  • 1 pkg
    taco seasoning mix, divided
  • 1 Tbsp
    mild chunky salsa or your favorite
  • 2 c
    shredded rotisserie chicken
  • 8
    (6 inch) corn tortillas
  • shredded lettuce
  • 1 md
    tomato, choppped
  • 4
    green onions, sliced
  • 1
    (4 oz) can sliced black olives
  • 1
    avocado--peeled, pitted, & diced, optional
  • 1 c
    shredded colby-monterey jack cheese, look for 2% fat cheese, if you want to continue to reduce your intake of fat grams

How To Make ranch chicken tacos

  • 1
    Combine first 2 items, plus 1 tsp. taco seasoning mix and salsa, in a small bowl. Cover, and refrigerate, until serving.

    Toss chicken with remaining taco seasoning. Cover bowl loosely with wax paper or plastic wrap. Microwave chicken, until it's heated through, about 2-3 minutes.

    Warm tortillas in a skillet, for about a minute on each side, to make them pliable, Place a scoop of chicken on the tortilla, & top with lettuce and remaining items and a spoonful of the ranch dressing mixture. Makes 8 tacos for 4 servings.
