Pineapple-Apricot Salsa

We enjoy this simple salsa with pork chops and ham. I might try it with chicken next. From Bon Appetit.

Ingredients

1 c
pineapple, finely chopped
1/2 c
red onion, finely chopped
1/2 c
apricot pineapple preserves
1/4 c
fresh cilantro, chopped
2 Tbsp
fresh lime juice
1 1/2 Tbsp
jalapeno, minced

Step-By-Step

1Toss all ingredients in small bowl to blend. Season with salt and pepper. (Can be made 1 day ahead. Cover and chill.)
