I love pico de gallo but most people put to much cilantro for my taste. I played around with this until i got it the way i liked it. It is the perfect compliment to my tacos made with the machaca...mmmm..yummy goodness!!!

Ingredients

roma tomatoes..seeded and chopped
1 small
yellow onion diced really small
1 small
fresh jalapeno pepper seeded and chopped
1 Tbsp
olive oil
2 Tbsp
chopped fresh cilantro very fine
2 clove
fresh garlic minced
1 large
lime juice only
1 tsp
salt
1/4 tsp
chipoltle chile pepper(or red pepper)

Chop every really fine and mix togather

Serve over just about anything ..its fresh and has a mexican zing
