Ingredients For grilled corn, tomatillo & avocado salsa

    tomatillos
  • 3 ears
    corn, shucked
  • cooking spray
  • 1 lg
    avocado, peeled
  • 1 c
    grape tomatoes, quartered
  • 1/2 c
    red onion, chopped
  • 2 Tbsp
    cilantro, fresh, chopped
  • 2 Tbsp
    lime juice
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper

How To Make grilled corn, tomatillo & avocado salsa

    Preheat grill to high heat.

    Discard husks & stems from tomatillos. Place tomatillos & corn on grill rack coated with cooking spray (indirect heat); grill 8 - 10 minutes or until tender, turning frequently.

    While vegetable grill, combine avocado & next 6 ingredients in medium bowl. Cut kernels from ears of corn & chop tomatillos; add to avocado mixture. Serve immediately or cover & chill until ready to serve.
