Tortilla chips aside, this is also good over grilled fish or chicken. Variation: Try it with honeydew melon or a combination of the two.


* Just a reminder....be sure to wear gloves when chopping hot chiles, and wash hands thoroughly afterwards!

Makes 2 cups

Ingredients

2 c
(1/4 inch) diced cantaloupe melon, from a 2 1/4 lb piece
1/4 c
(1/4 inch) diced vidalia or red onion
2 Tbsp
chopped fresh cilantro or basil
1
(2 inch long) hot red or green chile, minced*
2 Tbsp
fresh lime juice
1/4 tsp
salt

Mix all ingredients together in a medium bowl. Cover and refrigerate for at least 2 hours. Serve with tortilla chips.

* Remove the seeds of the chile if you want to lessen the heat.
