Tomato/Artichoke Pesto Pasta Sauce

Ingredients

1 can(s)
artichokes, canned and chopped, liquid reserved
3 large
tomatoes, fresh and chopped
5
garlic cloves, crushed
1 large
onion, chopped
2 Tbsp
flour
1 c
water, cold
milk
1/2 c
basil, fresh chopped
spinach noodles, cooked and drained

Step-By-Step

1Saute onion in vinegar.

2Add can of artichokes and liquid - make sure the pieces are bite-sized.

3Mix flour with cold water; add to artichoke mixture and stir while cooking for approximately 5 minutes.

4Skim milk can be added to thin mixture.

5Add the chopped tomatoes, and basil and cook for another 10-15 minutes; serve over spinach noodles.
