Tomato/Artichoke Pesto Pasta Sauce

- artichokes, canned and chopped, liquid reserved
- 3 large
- tomatoes, fresh and chopped
- garlic cloves, crushed
- 1 large
- onion, chopped
- 2 Tbsp
- 1 c
- water, cold
- 1/2 c
- basil, fresh chopped
- spinach noodles, cooked and drained
1Saute onion in vinegar.
2Add can of artichokes and liquid - make sure the pieces are bite-sized.
3Mix flour with cold water; add to artichoke mixture and stir while cooking for approximately 5 minutes.
4Skim milk can be added to thin mixture.
5Add the chopped tomatoes, and basil and cook for another 10-15 minutes; serve over spinach noodles.
