This is a great sauce for mopping a nice smoked pork brisket and having some at the table when served. You could use this in a variety of situations; however, I think that it is best on pork products. So, you ready… Let’s get into the kitchen.

Ingredients For pork essentials: mop & dipping sauce

  • 2 Tbsp
    coconut sugar
  • 1 Tbsp
    ancho chili powder
  • 1 Tbsp
    paprika, mild or hot, your call
  • 1 Tbsp
    dried sage
  • 2 tsp
    mustard powder, i prefer, coleman’s
  • 2 tsp
    ground cumin
  • 1 tsp
    salt, kosher variety, fine grind, or to taste
  • 1/4 tsp
    cayenne powder, or to taste
  • STAGE II
  • 1 1/2 c
    strong hot, hot coffee
  • 1 c
    ketchup, homemade, if possible
  • 4 oz
    lite beer
  • 3 Tbsp
    fresh clover honey
  • 1 Tbsp
    tamari sauce, or liquid aminos
  • STAGE III
  • 1 md
    yellow or white onion, roughly chopped
  • 8 oz
    raw bacon, chopped
  • 3 clove
    garlic, rough chopped
  • 1 Tbsp
    worcestershire, homemade if possible
  • 1 Tbsp
    lemon juice, freshly squeezed

    Storage of homemade condiments and spices Because homemade spices and condiments do not contain any preservatives, it is important to store them properly. Non-reactive (glass) containers with tight-fitting lids are a must. If I am making a dry spice, I love to use old spice bottles that I have run through the dishwasher. If I am doing homemade sauces, I love using Weck jars. They are all glass, come in all sizes and shapes, and have excellent leakproof lids. If you shop online, you can go to Amazon, and type in “Weck Jars” and you will find a ton of them. Dry spices should be kept in a cool space, away from sunlight (spice cabinet), and sauces, in most cases, should be stored in the fridge. If properly stored, this sauce should last 2 – 3 months.

    Gather your ingredients (mise en place).

    Whisk the Stage I ingredients together in a large saucepan. Add the Stage II ingredients and mix to combine. Make sure the coffee is really hot. Add the Stage III ingredients and mix together

    Place the saucepan over medium-low heat, and slowly simmer for about two hours, covered.

    Allow to cool for a bit, then add to a blender, and blend until smooth.

    Store in a non-reactive container in the fridge until needed.
