freshly grated parmesan cheese
in a skillet melt butter over medium high.
sprinkle flour while consistently whisking. cook until golden and lumpy (30 second to a minute)
gradually add in milk (keep whisking) and bring to a boil and cook for 1 - 2 minutes or until thickened.
Add Parmesan cheese, salt and pepper and paprika, whisking still, until smooth.
Remove from heat and serve immediately.
