Neopolitan Spaghetti Sauce
tomato paste, italian
green olives, stuffed, sliced
1Brown onions and garlic in oil.
2Add meat and brown slowly.
3Heat tomato juice, puree and paste in a deep kettle; add meat mixture, chili peppers; salt, pepper and sugar.
4Simmer 2-1/2 to 3 hours, until thick.
5Remove chili peppers and add olives.
6Simmer 10 minute longer.
7Serve with spaghetti, topped with grated parmesan cheese.
8Makes sauce for 1 pound spaghetti.
