Ingredients

3 c
soy sauce
3 c
brown sugar
1 1/4 c
water divided
1 c
shaoxing wine or dry sherry
1/2 c
gochujang sauce
1/2 c
honey
1/3 c
rice vinegar
1/4 c
minced garlic
1/4 c
grated ginger
4
green onions minced
1
ripe pear peeled and cored and grated on box grater
1 tsp
korean chili pepper powder or red pepper flakes
3 Tbsp
clear jel canning starch

Directions Step-By-Step

Mix the clear gel with 1/4 cup of water and set aside. In a large stock pot. Add the remaining ingredients and bring to a boil. Cook for 5 minutes. Add the clear gel while whisking to thicken the BBQ sauce.

Place in jars and place in a water bath for 15 minutes. Makes about 4 pints
