I got this recipe from a co-worker. She said this is her Dad's favorite thing in the world. I made if for a Christmas eve treat. My husband really liked it. It did have all of his favorites....Bacon, Onions, Tabasco and Coffee. We ate with crackers and sliced bread

Method:

Stove Top

Ingredients

1 lb
smoked bacon
4 clove
garlic
1 medium
onion sliced
3 Tbsp
brown sugar
tabasco sauce to taste
1 c
coffee
1/4 c
apple cider vinegar
1/4 c
maple syrup
black pepper to taste
water

Directions Step-By-Step

1
In a non stick pan, fry bacon in batches until browned and beginning to crisp. Use scissors to cut in 1 inch pieces.
2
Fry onion and garlic in bacon fat on medium heat until translucent.
3
Transfer the bacon, onion and garlic into a heavy based cast iron pot and add the rest of the ingredients except for the water. Simmer for 2 hours adding 1/4 cup water every 25-30 minutes and stir.
4
Cool for about 15 minutes and then place in food processor. Pulse for 2 - 3 seconds so that you leave texture to the jam or you could keep processing and make it a smoother and more past like.
