With Thanksgiving approaching I wanted to share a recipe for gravy that we have used for many years. It was published in a Boulder, CO newspaper.

We always double the recipe.

Ingredients

1/4 c
roasted garlic
1 Tbsp
diced carrot
1/4 Tbsp
honey
2 oz
all purpose flour
1 Tbsp
diced yellow onions
1 Tbsp
diced celery
1/2 c
unsalted butter
1 qt
chicken stock
salt and pepper to taste

Step-By-Step

1IN A SAUCEPAN USE 4 TABLESPOONS BUTTER AND SWEAT ONION, CARROT, AND CELERY UNTIL TRANSLUCENT

2ADD GARLIC AND HONEY, REMAINING BUTTER AND FLOUR

3COOK UNTIL THE FLOUR IS GOLDEN BROWN

4ADD STOCK AND BRING TO A BOIL

5TURN HEAT TO SIMMER FOR 1 HOUR, WHISKING EVERY 15 MINUTES

6IF CONSISTENCY GETS TOO THICK, ADD WARM WATER OR STOCK TO KEEP DESIRED CONSISTENCY

7USE HAND MIXER AND PULSE GRAVY WHILE SIMMERING TO BLEND VEGETABLES WELL

8ADD SALT AND PEPPER TO TASTE AND SERVE
