Sherry-chorizo Vinaigrette

Use this dressing as an alternative to the traditional warm bacon dressing

Ingredients

8 oz
ground chorizo
1 1/2 oz
shallots, minced
1/4 oz
garlic paste
4 oz
brown sugar
3 oz
sherry vinager
3 oz
vegetable oil

Step-By-Step

1Render chorizo in medium sauté pan, remove and save. Sweat shallots and garlic paste. Blend in and melt brown sugar. Add sherry vinegar and stir for 2 minutes. Remove from heat and whisk in vegetable oil. Pour into food processor and add cooked chorizo, pulse until chorizo is minced. Add Salt & pepper to taste. Serve warm.
