- olive oil, light
- 1/4 c
- white onion, diced
- 12 oz
- white america cheese
- 4 oz
- monterey jack cheese
- 1 c
- 2 medium
- roma tomatoes, seeds removed and diced
- 1 bunch
- cilantro, fresh, chopped
1Heat the oil in a saute pan over medium heat.
2Saute the onion until softened and reduce heat to medium-low.
3Stir in the shredded cheese and 1/4 cup of the cream.
4Quickly stir until the cheese is melted.
5Add the tomatoes, cilantro, and additional cream a little at a time until you reach desired consistency.
6Serve immediately with tortilla chips, tortillas, or on tacos, burritos, etc.
