Mexican Cheese Dip (Flameda)

- onion, chopped
- bell pepper, chopped
- 1 pkg
- sliced mushrooms
- 16 oz
- shedded jack cheese or mexican blend cheese
- 2 or 3 Tbsp
- grilled chicken or shrimp (optional)
1In a small amount of butter or olive oil, saute bell pepper and onions until limp. Add mushrooms and sherry. Cook, stirring frequently, until sherry evaporates.
2In a microwaveable bowl, mix the veggies with the cheese and microwave until cheese is melted, stirring every minute or so to make sure cheese does not burn. If you want to add chicken or shrimp, stir them into the melted cheese at this point and serve warm.
