Last football season my daughter asked me to come up w/ a dip that everyone would love, including the children. So, I know the kids love pepperoni pizza, as do most adults and decided to make a kind of " pizza dip." I figured for the bread or crackers to be dippers, why didn't I just make little pizza dippers? So, that's what I did. I made 2, 1 for the adults, which I added red pepper flakes and 1 w/out the flakes for the kids. I'll have a picture soon.
Heat oven to 425. In medium bowl, stir together parmesan cheese, italian herbs and garlic powder. Roll out 1 can pizza dough on lightly floured surface. Cut into 18 squares.Cut each square in 1/2 to form 2 triangles.
Place triangles on lightly sprayed, ( w/ cooking spray,) baking sheet.Brush w/ olive oil. Sprinkle w/ parmesan-herb mix. repeat w/ 2nd can of pizza dough. bake about 10 mins or until golden brown. Remove to a rack to cool.
In lg bowl, beat on low, cream cheese, sour cream, oregano, basil, garlic and red pepper flakes until smooth.Stir in pizza sauce and then pepperoni, shredded italian cheese, 3/4 cup mozzarella cheese, green pepper and scallions. Lightly spray a 2-quart oven proof casserole dish. Spoon mix into casserole dish and bake for 15 mins or until bubbly. remove from oven and sprinkle w/ remaining cheese. Bake additional 5 mins. Serve w/ pizza dippers and a lot of napkins!
