Best Ever: Spinach Dip

Do you like warm melty, cheesy, spicy, spinach dip? I sure do, and this recipe goes above and beyond flavor. It is so good!!

2 clove
garlic, minced
1 medium
onion, chopped
1 Tbsp
olive oil
27 oz
spinach or mixed greens (i used mixed greens)
hot chili peppers, from jar, tops cut off and minced
1 pkg
cream cheese (8 oz.), soft
1 c
milk or half and half
12 oz
grated monterey jack cheese
1 Tbsp
red wine vinegar
salt and pepper to taste
2 Tbsp
sour cream (opt)

Directions Step-By-Step

Saute onion, garlic, and peppers over medium heat until soft (I even let mine brown a little).
Transfer to large bowl (I used my Kitchen Aid mixer) and mix in, spinach, cheese, cream cheese, milk, and vinegar. Season with salt and pepper.
Spoon mixture into shallow baking dish (I used a 9 inch round cake pan)and bake at 400 degrees F. Bake until dip is bubbly and top is light brown, about 35 minutes. Top with 2 TBS sour cream and serve warm with tortilla chips.
