Samoas Cheesecake
For the Cookie Base:
(You may want to double the cookie base for a thicker crust.)
¾ cup all-purpose flour
¼ cup cornstarch
a pinch of salt
¼ cup unsalted butter, room temperature
¼ cup unsalted butter, for browning
¼ cup powdered sugar
1 tsp vanilla
For the Cheesecake:
2 1/2 lbs cream cheese
2 1/2 cups sugar
2 TB flour
5 eggs
2 tsp vanilla
1 cup sweetened coconut
For the Caramel:
1 ½ cups sugar
1/3 cup water
2/3 cup heavy cream
For the Chocolate:
6 ounces of semi-sweet chocolate chips

***For some reason, when I pinched this recipe, I apparently didn't catch that step # 20 "Bake at 350F for 10 minutes. Set out to cool." should actually be step #7, under making the crust.*** Once the cheesecake is assembled, it should NOT be put back in the oven!

My family and friends liked this cheesecake. The only small thing was that it was a little too sweet.
