Ingredients For diabetic tuna salad

  • 1 can
    12 ounce, solid white tuna (water-pack), drained
  • 1/4 c
    finely chopped onion
  • 1/4 c
    thinly sliced celery
  • 1/4 c
    shredded carrot
  • 1 Tbsp
    capers, rinsed and drained
  • 2 Tbsp
    olive or canola oil
  • 2 Tbsp
    lime or lemon juice
  • 1 Tbsp
    dijon-style mustard
  • 1 Tbsp
    champagne vinegar or white wine vinegar
  • 1 1/2 c
    torn mixed salad greens
  • 1/2 c
    slivered almonds, toasted
  • 2
    whole wheat pita bread rounds, halved crosswise - optional

How To Make diabetic tuna salad

    In a medium bowl, combine tuna, onion, celery, carrot, and capers; set aside. For vinaigrette: In a small screw-top jar, combine olive oil, lime juice, mustard, and vinegar. Cover and shake well to combine. Pour vinaigrette over tuna mixture; toss gently to combine. Add greens and almonds; toss gently to combine.

    Optional use: Place a pita bread half in each of four shallow salad bowls. Top pita bread halves with tuna mixture.
