Amish Potato Salad

This is an easy, delicious recipe and I normally have all the ingredients on hand.

I use red skinned potatoes and I leave the skins on.

Ingredients

1 lb
potatoes, boiled, peeled and cut into bite sized pieces
2
eggs, hard boiled and chopped into pieces
1/4 c
mayonnaise, i use helmann's.
1/4 c
sour cream
1 Tbsp
yellow mustard
1/4 c
sugar *
1 tsp
vinegar
salt and pepper, to taste

Directions Step-By-Step

Combine Mayonnaise, sour cream, mustard, sugar, vinegar, salt and pepper. Mix well.

Place potato pieces and egg pieces in a large bowl.

Pour sauce over potato/eggs and gently stir until well coated. Chill at least 30 minutes, before serving.
