Cucumber Carrot Salad

1/4 c
sweet chili sauce
2 Tbsp
seasoned rice wine vinegar
1 large
cucumber, peeled, thinly sliced
1 c
matchstick carrots
1/2 c
presliced green onions
1/2 c
chopped red sweet pepper
1 small
tomato chopped for garnish (optional)


1Whisk chili sauce and vinegar in medium bowl until blended.
2Peel cucumber; cut in half lengthwise and slice. Add cucumber and remaining ingredients to sauce mixture; toss to coat. Chill until ready to serve.
3Very Good. Double recipe or just use 2 cucumbers.
