1/2 clemon juice

2pita breads, each cut into 4 pieces

500gcherry tomatoes, halved

2cucumbers, halved lengthways, seeds removed, chopped

1red pepper, chopped

3small radish, trimmed, thinly sliced

4onions, chopped

1 cflat-leaf parsley leaves, coarsely chopped

1/2 cmint leaves, coarsely chopped

1 Tbspsumac
How To Make sumac fattoush, diabetic friendly

1Make Dressing: Combine all ingredients in a screw-top jar. Secure lid. Shake until well combined and set aside.

2Pita's: Heat oil in a saucepan over medium heat. Cook bread, in 4 batches, turning, for 1 to 2 minutes or until crisp and golden. Transfer to a wire rack to drain.

3Salad: Place tomatoes, cucumbers, pepper, radish, onions, parsley and mint in a large bowl. Sprinkle with sumac. Drizzle with dressing. Toss gently to combine.

4To Finish: Break bread into pieces and add to salad. Toss gently and serve.
