Steakhouse Potato Salad

A great switch from the classic potato salad.


1 package dry ranch dressing mix
2 cups mayonnaise (can be light or regular)
1-2 tablespoon milk (to desired consistancy)
3/4 cup chopped green onion
1/2 cup cheddar cheese
1 lb bacon slices cooked and crumbled (can use turkey bacon or regular)
5 lbs red potatos with skin on (wash well)

Directions Step-By-Step

Boil potatoes in salted water. Cook until tender (about 15 minutes). Drain and cool. Cut potoates into desired size, and refrigerate until cold.

In a small bowl, stir together the ranch dressing mix, mayonnaise, and green onion. Cover, and refrigerate for about 2 hours to blend flavors. Remove from refrigerator and add milk to get desired consistancy.

Stir the mayonnaise mixture into the bowl of potatoes. Toss in cheddar cheese and crumble bacon into the bowl, and stir to distribute. Serve.

I thought it was the Steakhouse Potato Salad I made before. Which by the way, was delicious. It was basically the red potatoes, bacon, celery, 1/2 cup of Ranch Dressing, 1/2 cup of Kraft light mayo with Olive Oil. Don't remember if it called for celery, but I used some anyway. I also put some hard boiled egg in. I always use my bacon fat. I do like the tweeks listed above! Will have to see what my salad tastes like this year.

I make this all the time with a few tweeks.

1. Add a tablespoon of the bacon fat to the mayo, onion mixture as well as double the milk called for.
2. MORE CHEESE! I use 2 cups, but then again I am from WI.

I can't have egg so am always disappointed when we have family gatherings & I have to pass up potato salad. The grocery store that I work at sells this & I love it !!! Now I can make & bring my own to those gatherings. Thank you!

This sounds like a fantastic change from the same old potato salad. I am very eager to try it. My daughter just asked me today to change it up because my mom and I usually make the same potato salad with sweet relish; and she's tired of the sweet. Thanks
