- 3 lb
- red skinned potatoes, unpeeled
- dill pickle spears, chopped
- celery stalks, chopped
- red onion, chopped
- hard boiled eggs, chopped
- 3/4 c
- 2 Tbsp
- dijon mustard
1Boil potatoes until tender; cool. Cut into 1-inch pieces.
2Stir in rest of the ingredients; season to taste with salt and pepper.
3Cool in refrigerator.
