I come from a large family and whenever we have a family get-together Im the one they pick to bring the potato salad and being from the South it is a staple here.

Ingredients

3 lb
white all purpose potatoes peeled and diced
1 medium
onion ,diced small
2 stick
celery clean and chopped small
1/4 c
green and red pepper diced
1/2 c
sweet pickle relish
1 small
jar of chopped pimento
1 c
hellmans mayannaise (my choice)
1/8 c
yellow mustard
1/4 c
sugar or splenda
1/8 tsp
black pepper
1 tsp
salt
2 large
hard boiled eggs,chopped

Step-By-Step

1Cook potaotes until tender.Add vegetables and pimento and pickles.
Add eggs and salt and pepper.
2Mix mayannaise and mustart and sugar in small bowl with a wisk and pour over the potato mixture. this is good warm or even better cold.
