This is something I threw together for Memorial Day. My husband, not a fan of potato salad at all, LOVED this. I hope you will also enjoy it!

Ingredients

7 large
yukon gold potatoes
refrigerated bacon pieces
1/2 c
sour cream, lite
1/2 c
mayonaise
green onion
shredded cheddar cheese

Step-By-Step

1Bring salted water to boil; peel and cube potatoes while boiling.

2Chill 3 to 24 hours

3Add bacon pieces and cheddar cheese to taste

4Mix mayonnaise and sour cream then mix into potatoes, bacon, and cheese

5Garnish with thinly sliced green onions
