Tangy Macaroni Salad

I seldom enjoy macaroni salad. All those I've eaten are either to sticky or too bland, or both. I think macaroni salad, and potato salad as well, should help moisten your mouth when eating a sandwich, so I like mine "loose". At a church potluck, the minister complimented me, saying this is the only macaroni salad she liked. People who do not like vinegar or moist salads will not like this.

5 or 6 people...makes 5 cups

Ingredients

1 c
1 cup of mayo or light mayo, not salad dressing.
2 Tbsp
vinegar, white vinegar best.
1 Tbsp
prepared mustard, yellow or brown
1 tsp
sugar
1 tsp
salt
1/4 tsp
black pepper
1 c
finely chopped green or red bell pepper
1/4 c
finely chopped onion
8 oz
elbow macaroni (cook and drain it)

Directions Step-By-Step

Boil a few quarts of water. when boiling, add 8 oz. of elbow macaroni.

In the meanwhile finely chop the bell peppers and onions. Set aside.

Combine the first six ingredients to make the dressing.

Drain the macaroni and toss to rid from water.

In a large bowl, stir in all ingredients,cover and chill.
