Nice change to traditional macaroni salad. Always have to double the recipe and never have left overs.

This sweet and creamy salad is ideal for a casual game night or potluck. It's got a surprising flavor that's sure to be the talk of the evening!


16 oz
elbow macaroni, cooked
1 medium
carrot, shredded
1 large
green pepper, chopped
1 medium
red onion, chopped
2 c
14 oz
sweetened condensed milk
1 c
1 c
apple cider vinegar
1 tsp
1/2 tsp

Directions Step-By-Step

In large bowl combine macaroni, carrots, green pepper, and onion.
In small bowl whisk mayo, milk, sugar, vinegar, salt, pepper, until smooth.
Pour over macaroni mixture, toss to coat. Cover and refrigerate overnight.

    I remember having this as a kid and I made it for a picnic. Everyone just loved it. I wonder how it would be as the dressing on potatoes for a potato salad

    This salad was very nice, except for our taste it had a little too much vinegar. The next time I make it, I will cut back on the vinegar a bit.

    By the way, I tried the recipe with potatoes instead of the macaroni and it was not good. Think the starch of the potatoes did something to the condensed milk,, Don't try it. Stick with the orignal recipe !!!
