My best friend gave me a big bowl of cherry tomatoes and I wanted a recipe to use them. This is what I came up with and it is very tasty, hubby loved it.
pasta of choice
salami, cut into bite size pieces
parmesan cheese, grated or shredded
garlic, grated or minced
olive oil, extra virgin
red wine vinegar, adjust to taste
salt and pepper to taste
1Preheat over to 400 degrees. Wash and dry tomatoes, place on baking sheet drizzle with olive oil,(not the 1/4 cup as stated that goes in the salad) sprinkle with salt, pepper and 1 T. of the dried basil. Bake at 400 degrees for 20 minutes until tomatoes are soft. Cook pasta according to package and drain. When tomatoes are done add to pasta, add all other ingredients, don't forget the T. of basil, and stir to combine.
