Macaroni Salad

When I was a newly wed, we visited some relatives in WV and she made this macaroni salad and I thought it was one of the best things I ever tasted (macaroni wise). I always make this with 4 cups, and it makes a HUGE amount! I filled a 14 cup bowl and a 5 cup bowl with this. You could easliy make it with 2 cups of macaroni and have a good amount. I don't measure the tomatoes and cukes or onion, just how ever much I want to put in there. Hope you like it!

Stove Top

Ingredients

4 c
firm cooked macaroni (do not over cook!)
chopped onions
diced cucumber
diced tomatoes
salt and pepper
mayonnaise

Directions Step-By-Step

Cook macaroni in salted boiling water till it's firm, but do not over cook it.

When done, drain and run cold water over it to stop the cooking process. Drain well.

While your macaroni is cooking gather your other ingredients together and a large bowl. Chop your onions and dice your tomatoes and cukes.

Place everything in a large bowl. Add salt and pepper. Start adding some mayonaise a few spoonfulls at a time and stir well after each addition until you get it the way you like it. It's one of those things you just have to add to it until you get it to taste the way you want it.
