Ingredients For macaroni & egg salad

1 boxmacaroni, elbow

1 lgred onion, minced

6 x lghard boiled eggs, chopped

1/2 - 1 cmayonnaise, adjust to your taste

1 pinchcayenne pepper
-
1 Tbspolive oil, extra virgin

1 Tbspwhite wine vinegar
-
1/4 cparsley

salt & pepper, to taste
How To Make macaroni & egg salad

1Soak minced onion in cold water for 10 minutes. Drain.

2Cook macaroni according to package directions. Drain & rinse under cold water; drain again.

3In a large bowl, add macaroni, onion, eggs, mayo, cayenne, oil, vinegar & parlsey; mix well. Season with salt & pepper & mix well again. Refrigerate 3 hours for flavors to marry.
