Ingredients For macaroni & egg salad

  • 1 box
    macaroni, elbow
  • 1 lg
    red onion, minced
  • 6 x lg
    hard boiled eggs, chopped
  • 1/2 - 1 c
    mayonnaise, adjust to your taste
  • 1 pinch
    cayenne pepper
  • 1 Tbsp
    olive oil, extra virgin
  • 1 Tbsp
    white wine vinegar
  • 1/4 c
    parsley
  • salt & pepper, to taste

How To Make macaroni & egg salad

    Soak minced onion in cold water for 10 minutes. Drain.
  • 2
    Cook macaroni according to package directions. Drain & rinse under cold water; drain again.

    In a large bowl, add macaroni, onion, eggs, mayo, cayenne, oil, vinegar & parlsey; mix well. Season with salt & pepper & mix well again. Refrigerate 3 hours for flavors to marry.
