ARUGULA AND COUSCOUS SALAD

This arugula goes great with, just about any food. I like it with a good tuna sandwich, or a bowl of French onion soup.

Ingredients

1 1/2 c
water
1 c
couscous
1/8 c
red wine vinegar
1/4 c
olive oil, extra virgin
1 c
cooked lintils
2 c
chopped arugula
4
scallions chopped fine
1 small
diced cucumber and seeded
1 pt
cherry tomatos cut in half
1/2 c
feta cheese

Step-By-Step

1Bring water to boil, remove from heat add couscous and cover. When liquid is absorbed, about 10 minutes, transfer to a salad bowl, toss with lemon juice and olive oil.

2Add 1 cup lintils cooked, add arugula, scallions, cucumber and cherry tomato halves.

3Just before serving, add feta cheese, toss and serve.
