Tomato cucumber salad
This is quick, easy and for those who are watching their calories, fats, cholesterol, this is a friendly dish!!
- large plum tomatoes
- large cucumber, peeled and seeded
- scallions (green onions)
- 1/2 tsp
- 2 Tbsp
- olive oil
1slice the cucumber into half moons or dice it up into small pieces and the add the salt to them. toss and let sit 10 mins. They will "sweat", KEEP THIS WATER!!!
2Dice up the tomatoes and add to the cucumber bowl.
3dice up the scallions and add to the bowl.
4Add the olive oil and toss.
5At this point you can add whatever else you'd like. Garlic powder, oregano, rosemary, thyme, dill... get the idea? =D
